The Global Vegan | Ellie Bullen on the impact a Vegan lifestyle can have for us and the planet
Ellie Bullen, also known as ‘Elsa’ is the nutritionist behind The Global Vegan and previously hugely popular blog and cookbook Elsa’s Wholesome Life. ‘Veganism’ is exploding at the moment and we grill her on what exactly a vegan diet looks like and the best approach to ensuring you get all those vital nutrients.
We also chat through it’s ever increasing popularity, especially here in Oz. Google stats show that the interest in ‘veganism’ has increased seven fold between 2014 and 2019.
Some say it’s because of our efforts to ensure we reduce our carbon footprint. A recent study by Oxford University claimed that cutting meat and dairy products from your diet could reduce an individual’s carbon footprint by up to 73 per cent.
We are becoming increasingly aware of the impacts of agriculture on our planet and it’s really changing what we put on our plates. If everyone stopped eating these foods, global farmland use could be reduced by 75 per cent, an area equivalent to the size of the US, China, Australia and the EU combined.
Ellie’s recent cookbook The Global Vegan makes replacing a few meat dishes easy peasy! There’s SO many wonderful recipes to choose from… vegan fried eggs, Aloo Jeera, Tom Kha Gai Soup, as well as, plant-based versions of well-known favourites, such as Pad Thai, Fish and Chips and Spicy Ramen Soup.
While her first book was an explosion of colour, sunshine and coastal life, the second is full of exotic adventures with absolutely extraordinary photography across Korea, India, Japan and more. We hope this interview provides a bit of inspiration for making a few little changes to your plate which in turn can make a big impact on our planet.
